Ingredients:

  • 1 cup butter

Directions: Preheat oven to 400 degrees Fahrenheit. Prepare a 10.5-by-15.5-inch jelly roll pan by lining it with parchment paper. Be sure to crease the edges so that it’s easier to lay the crackers in a single layer.

Place the crackers in a flat, single layer on the jelly roll pan.

Just grab your sleeve of saltines, some butter, brown sugar, and chocolate, and you’re good to go. It’s up to you to choose your toppings, but it may not be up to you how many of these sweet treats you consume.

Ingredients:

  • 40 saltine crackers
  • 1 cup butter
  • ¾ cup brown sugar
  • 12 ounces mini chocolate chips
  • ½ cup chopped nuts
  • ½ cup toffee pieces
  • 1 tablespoon candy sprinkles garnish

Directions: Arrange 40 saltine crackers on a nonstick foil in a jelly roll pan. Melt butter and brown sugar in pan and boil 3 minutes. Pour over crackers. Bake at 350 degrees Fahrenheit for 5 minutes. Pour chocolate chips over and let stand 5 minutes to melt. Spread around with knife and then sprinkle nuts and toffee bits over top and or raisins. Now that spring has sprung, ice cream is officially back in season. Celebrate with these Ritz Ice Cream Sandwiches from Two Peas and Their Pod. Pairing salty with sweet, this dessert, which enlists only crackers, peanut butter, ice cream, and chocolate chips, proves that simple is often better, and finger food is always the most fun.

Ingredients:

  • 1½ cups milk chocolate chips
  • 24 Ritz crackers
  • 1 cup creamy peanut butter
  • 1 pint vanilla ice cream

Directions: Place the chocolate chips in a medium microwave-safe bowl and melt until smooth, stirring every 30 seconds.

Cover a baking sheet or platter with wax paper. Dip the bottom side of the crackers in the melted chocolate. Place the crackers on the wax paper. Transfer the crackers to the freezer and let the chocolate dry completely. This will take about 5 minutes.

Ingredients:

  • ½ cup all-purpose flour
  • ¼ cup dark cocoa powder
  • Pinch of salt
  • ¼ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Chocolate Dip

  • ⅓ cup semisweet chocolate chips
  • ½ teaspoon coconut oil
  • 10 Ritz crackers, crushed

Directions: In a small bowl, whisk together the flour, cocoa powder, and salt. Set aside. In a medium bowl, beat the butter and sugar together until very fluffy, about 45 seconds. Next, add the egg yolk and vanilla and beat until combined.

Add the dry ingredients to the butter mixture in two increments, beating well. At first, the dough will be very crumbly, but beat it until it comes together in a mass. Be sure to scrape the sides of the bowl as well.

On a cocoa-powder dusted surface, roll the dough out to ¼-inch thickness. Use your favorite cookie cutter to cut out shapes. Place the cookies on a lined sheet pan and place in the freezer.

Preheat the oven to 350 degrees Fahrenheit. When the oven is hot, slide the cookies directly from the freezer into the oven. Bake for 9 to 11 minutes, or until fragrant and the tops look dry.

Let the cookies cool on the sheet pan for at least 5 minutes. Move the cookies to a cooling rack to cool completely.

Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second pulses in the microwave. Stir between each pulse. Remove the chocolate from the microwave before the chips melt fully, and stir until smooth.

Dip each cookie into the chocolate, and then sprinkle on the crushed Ritz crackers. Let the chocolate dry on the cookies before serving.

Baked Saltine Cracker Recipe

To mix the brownie batter, combine semisweet chocolate and unsalted butter in a large microwave-proof bowl. Heat until the ingredients have melted. Add the granulated sugar, brown sugar, large eggs, ground espresso beans, and vanilla extract. Whisk until it’s smooth and slightly fluffy. Sift all-purpose flour, cocoa powder, and fine sea salt into the bowl. Fold the ingredients together with a spatula or whisk until smooth. Set aside.

To make the ice cream, combine sweetened condensed milk, vanilla extract, and dark rum together in a small bowl. Set aside. With a stand or handheld mixer, whisk the heavy cream on medium-high speed until soft peaks form, approximately 3 minutes. It’s better to under-whisk the cream than to over-whisk it. With a spatula, gently fold the sweetened condensed milk mixture into the whipped cream until combined.

Pour the ice cream batter on top of the brownie and smooth the top with a spoon. Arrange the crackers on top of the ice cream batter. Move the pan back into the freezer to harden at least 8 hours to overnight. Cut between each cracker into little sandwiches. Wrap each with plastic wrap and keep in the freezer.

Recipes Using Saltine Crackers

Combine saltines and graham cracker crumbs in the bowl of a food processor fitted with the blade attachment. Add butter and pulse until well combined, about 1 minute.

Pour crust mixture into the bottom of a 10-inch tart pan with a removable bottom. Using your fingers, press the crumbs starting from the middle out to make an even, compact crust. Work your way to the sides last, pressing the crumbs all along the side of the pan. Place tart pan on a baking sheet and bake in the oven until golden brown, about 15 minutes. Remove from the oven and let cool completely on a rack before starting the filling.

To make the filling, combine sugar, cornstarch, cinnamon, cayenne powder, and salt in a medium saucepan, whisking to break up any lumps. Set the saucepan over medium heat and slowly add the half-and-half while continuously whisking. Slowly bring the mixture to a boil; you want to keep the heat at medium or medium-low so the cornstarch has enough time to cook. It should take about 10 minutes for the mixture to come to a boil.

When the filling starts to boil, remove it from the heat and add both chocolates, 1 teaspoon of vanilla, and the tequila. Whisk until chocolate is completely melted and mixture is smooth. Using a plastic spatula, scrape the mixture into the cooled crust and spread evenly. Let cool to room temperature, then cover with plastic wrap and let chill in the refrigerator for at least an hour before serving.
